Vegetarian Chili

Just as I was about to walk out the door to work this morning, my daughter threw up. I am sure that a lot of you can relate to that scenario. After a cleanup and restoration of peace and copious amount of fluids being given to my daughter, she fell asleep and slept peacefully for 2 hours. With a few moments to spare (after laundry etc.), I started to think about dinner. What shall I make? I definitely didn’t want to venture out of the house with a sick child in tow; I had to be creative and use the items I currently had in my kitchen. I...

My Christmas Wish for you….

I wanted to take this time to wish all of my readers and social media followers a joyous holiday season and a Happy New year! This is one of my favorite times of the year. Christmas for me is about being with friends and family that you adore. I always try to take time away from our busy life to relax (Ha Ha somewhat – I have young children) and simply enjoy being with others. This time of year many people reflect over the past year remembering the good times and bad. Life is not always easy. As you reflect on your experiences, may you...

Butternut Squash Soup

This is definitely a family favourite in my house! Butternut squash soup is easy to make and delicious. I am sure you have been told to “eat the rainbow”. The beautiful orange colour of this squash indicates the high amount of carotenoids (beta-carotene- which the body will be use to convert into Vitamin A). Everywhere I go, people are coughing, and sneezing. Squash is also a great source for the antioxidant Vitamin C, which in turn will support your immune system, and protect against the free radical. “Wow” you...
